INGREDIENTS
- 4 cups frozen hash brown, defrosted
- 1/2 cup Olive Oil Cheddar Cheese
- 1/2 cup Olive Oil Mozzarella Cheese
- 1/2 onion, grated
- 1/4 cup scallions, finely sliced
- 1-2 cloves garlic, minced
- 1 flaxseed egg
- 5 Tbsp cornstarch
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp paprika
- Olive oil for cooking

DIRECTIONS

Defrost you hash browns and using a kitchen towel, squeeze out the excess water. In a large bowl, combine the potatoes, and remaining ingredients in a bowl and mix well.

Form the mixture into 4″ patties. Heat a skillet with olive oil and place the formed patties in without overcrowding the pan. Cook around 3-4 minutes on each side or until golden brown. Enjoy with non-dairy sour cream or apple sauce.
chef’s notes
To make a flaxseed egg, combineĀ 1 Tbps flaxseed meal mixed with 2.5 Tbsp water. Let sit for 5 minutes until thicken to a egg-like consistency.
