Korean Corn Cheese

INGREDIENTS

  • 1 can (15.25 oz) whole kernel sweet corn, drained
  • 2 Tbsp plant-based mayo
  • ½ Tbsp sugar
  • Salt & Pepper
  • 2 Tbsp plant-based butter
  • 1 cup GOOD PLANeT Mozzarella Shreds
  • Sliced scallions (optional)

DIRECTIONS

1.

Preheat oven to broil.

In a medium bowl, combine corn, mayo, sugar, and a pinch each of salt and pepper and mix well.

3.

Melt butter in an oven-safe pan over low heat. Add the corn mixture into pan and mix with the melted butter.

4.

Sprinkle mozzarella in an even layer over the corn and cover the pan with a lid. Cook for 5-10 minutes over medium-low heat, or until cheese is melted and bubbling.

5.

Transfer pan to broiler to brown the top, about 3-5 minutes (be sure to keep a close eye!).

6.

Remove pan from heat and top with scallions if desired. Enjoy hot and melty!
