INGREDIENTS
- 2-15oz cans of sweet corn, cream style
- 1-15oz can corn, whole kernal
- 1 box of your favorite cornbread mix
- 1 jalapeño, diced
- 1 flaxseed egg
- 1 cup GOOD PLANeT Olive Oil Cheddar Cheese
- 1 cup GOOD PLANeT Olive Oil Mexican Blend Cheese
- 4 Tbsp plant-based butter, cubed

DIRECTIONS
1.
Pre-heat the oven to 350* F. Prepare an 8″x12″ oven-safe dish by coating with a bit of olive oil or plant-based butter.
2.
In a large mixing bowl, combine the corn, cornbread mix, jalapeño, cheeses, and flax seed egg together and mix well.
3.
Pour mixture into prepared oven-safe dish. Top the mixture with the cubed butter. Cover with aluminum foil and make for 45 minutes. Uncover and bake for another 10-15 min or until the top is golden brown.

chef’s notes
To make a flaxseed egg, combine 1 Tbps flaxseed meal mixed with 2.5 Tbsp water. Let sit for 5 minutes until thicken to a egg-like consistency.
