- 4 slices sourdough bread
- 3 Tbsp everything but the bagel seasoning
- 1 tomato, thinly sliced
- 2 Tbsp plat-based pesto
- 4 slides GOOD PLANeT Cheddar Slices
- 4 Tbsp plant-based butter
- salt & pepper to taste

Arrange tomatoes on a cutting board and sprinkle with salt and pepper. Let sit for 15 minutes to draw out excess moisture.
Brush the outside of each slice with butter. Sprinkle everything spice mix over both buttered sides of the bread, pressing the spice mix into the bread to adhere. On the other side lay down the cheese slices, pesto, and tomato slices. Add the top piece of bread.
Heat 1-2 tablespoons of olive oil in a large skillet over medium heat. Place the sandwiches in the skillet and cook until golden on each side.
