- 3 Tbsp Olive oil
- 2 pints cherry tomatoes, about 24 oz
- 6 cloves garlic, peeled and left whole

- 1 tsp fresh parsley
- 12 oz penne or your favorite pasta
- Salt & pepper to taste

Pepper Jack Snackable Wedges
Preheat oven to 400° F.
In a large Dutch oven or oven-safe casserole dish, combine tomatoes, garlic, and a few generous glugs of olive oil. Mix well.
Create a space in the center of the dish and place cheese wedges in the center. Drizzle olive oil directly on wedges.
Transfer dish to oven and bake for 40-45 minutes.
Meanwhile, cook pasta according to package instructions. Drain pasta, reserving about 1 cup of the cooking water.
Once the cheese and tomatoes are baked, stir the mixture until you get a creamy sauce (you can remove the garlic pieces or crush them into the sauce).
Add pasta and stir well, pouring in reserved pasta water as needed to reach desired consistency. Season with salt and pepper to taste and top with fresh parsley. Enjoy warm!
