INGREDIENTS

  • 8oz dry pasta (bucatini, spaghetti, or your favorite shape)
  • 1 Tbsp olive oil
  • 1- 7oz block GOOD PLANeT Olive Oil Italian-Style Mozzarella, shredded
  • Salt & Pepper
  • 2 cups your favorite vegetables (we used broccoli, sun dried tomatoes, bell peppers)

DIRECTIONS

1.

Bring a large pot of heavily salted water to a boil. Add pasta and cook until just al dente, about 8-10 minutes. Turn off heat and set aside.

2.

While the pasta is cooking, warm up the olive oil. Add veggies, salt and pepper, and sauté until veggies are soft. Add 1/3 cup of the hot pasta water and stir to combine.

3.

Add shredded cheese to the pan and stir until melted and combined. Can adjust consistency by adding more of the pasta water to loosen sauce.

4.

Add cooked pasta to sauce and toss until combined. Serve immediately and enjoy!
