- 1 Tbsp olive oil
- 1 minced shallot
- 1 cubed butternut squash
- 1 tsp crushed red pepper flakes
- 4 cups vegetable stock
- 1 1/2 cups coconut milk
- 2 cups (1 bag) GOOD PLANeT Cheddar Shreds
- Salt & pepper to taste

On a medium heat, place your olive oil, garlic, and shallot into a large pot and sauté until soft, approximately 5 minutes.
Once the garlic and shallot become aromatic throw in your squash and cover with the vegetable stock. Bring to a simmer and let cook for 20 minutes until the squash is fully cooked and soft.
Blend contents of pot until smooth. Pour back into your pot and add your coconut milk.
Add your bag of GOOD PLANeT Cheddar Shreds and mix well until fully combined.
Let cool and garnish with your favorite toppings. Our favorites are green onion and croutons!
