Broccoli Fritters

INGREDIENTS

  • 2 cups chopped broccoli (about 2 crowns)
  • 1/2 cup GOOD PLANeT Olive Oil Mozzarella Cheese
  • 1/2 cup all-purpose flour
  • 1/4 cup breadcrumbs (use gluten-free if preferred)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • salt & pepper to taste
  • 1/2 cup plant-based milk
  • 2 Tbs olive oil (plus more for pan frying)

DIRECTIONS

1.

Steam the broccoli (about 2 crowns), drain excess water and roughly chop the broccoli. You want to make sure there is texture in the fritters.

To make the fritter mixture, in a medium bowl, combine the broccoli, cheese, flour, breadcrumbs, and seasonings. Slowly add the milk and mix until everything is combined. You have should have a doughy consistency. If it’s too dry, you can add more milk, one Tbsp at a time.

Scoop out the mixture and form into patties with your hands. You should end up with about 8-10 fritters, depending on the size.

Heat some olive oil in a large skillet over medium heat. One hot, carefully add the fritters to the pan and cook for about 3-4 minutes on each side, or until golden brown and crispy. Add more oil as needed, making sure each fritter gets nice and crispy.

5.

Once cooked, transfer to a paper town to remove excess oil. Serve hot!
