INGREDIENTS
- 8oz pasta (we liked penne for this dish but can use your favorite)
- 1 cup plant-based milk
- 1 Tbsp olive oil
- 3 cloves garlic, minced
- 3/4 cup GOOD PLANeT Foods Olive Oil Mozzarella Cheese
- 1 lemon, juiced and zested
- 1 cup spring peas
- 1/2 cup baby spinach
- Salt & pepper to taste
- Fresh basil or parsley for garnish

DIRECTIONS
1.
Cook pasta according to instructions on the package in a pot or salted water.
2.
In a pan, sauté garlic and veggies in olive oil over medium heat.

Lower the heat and slowly pour in the plant-based milk. Slowly sprinkle in the cheese, stirring until melted and creamy. About 2-3 minutes. Can adjust texture by adding pasta water.
4.
Stir in lemon zest and juice, season with salt and pepper to taste.
5.
Add the cooked pasta to the sauce and toss gently before enjoying.
