Veggie & Cheese Flatbread

INGREDIENTS

  • 2 flatbreads
  • 1/2 cup GOOD PLANeT Foods Olive Oil Cheddar Cheese
  • 1/2 cup GOOD PLANeT Foods Olive Oil Mozzarella Cheese
  • 1/2 cup asparagus, cut in 1-inch pieces and blanched or lighted sautéed
  • 1/2 cup peas
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup pesto
  • 1 tsp lemon zest
  • 1/2 tsp chili flakes (optional)
  • Salt & Papper to taste
  • Olive oil for drizzling
  • Fresh basil for garnish

DIRECTIONS

1.

Preheat oven to 420°F. Line a baking sheet with parchment paper or a reusable silicone mat.

2.

Place flatbreads on the baking sheet. Spread the pesto in a thin layer on each flatbreads.

3.

Evenly sprinkle the olive oil cheeses over each flatbread. Spread out the veggies and season with salt, pepper, and chili flakes then drizzle with a bit of olive oil.

4.

Bake for about 10-15 minutes, or until cheese is melted and edges are golden brown.

5.

Once out of the oven, top with lemon zest and basil before enjoying.
