INGREDIENTS
- 1-28oz black beans, 2 cans, drained and rinsed
- 2 cloves garlic, minced
- 2 Tbsp tomato puree
- 1 Tbsp chili powder
- 1 tsp salt
- 1/4 cup vegetable broth
- 1 lime, juiced
- 12 corn or flour tortillas
- 1 cup GOOD PLANeT Foods Mexican Blend Cheese Shreds

DIRECTIONS

Pre-heat the oven to 450*

In a medium pan, add a couple Tbsp of olive oil. Add minced garlic, tomato paste, vegetable broth, and spices. Saute until fragrant, about 2 minutes.

Add the drained and rinsed black beans. Stir until combined and the vegetable broth reduces. Mash the beans with the back of a fork or potato masher for a creamier texture. Finish with the lime.

Coat a oven safe baking pan with olive oil. Lay our the tortillas and fill each tortilla with about 2-3 Tbsp of the black bean mixture and top with GOOD PLANeT cheese shreds. Folk in half and bake for about 5 minutes then flip and bake the other side for another 5 minutes.
