Cheesy Vegetable Chowder

INGREDIENTS

  • 2 Tbsp olive oil
  • 3 cups potatoes, peeled and diced
  • 2 1/2 cup broccoli, chopped into small pieces
  • 1 cup onion, chopped
  • 1 cup carrots, chopped
  • 2 celery ribs, diced
  • 3 1/2 cup vegetable broth
  • 1 stick (1/2 cup) plant-based butter
  • 3/4 cup all-purpose floud
  • 4 cup plant-based milk
  • 1 tsp salt
  • 1/2 tsp black pepper

DIRECTIONS

In a large dutch oven, heat 2 Tbsp olive oil. Add the pototoes, broccoli, onions, carrots, celery to saute until tender. About 3-5 minutes. Add the vegetable broth and simmer for about 20 minutes.

In a large sauce pan, melt the butter, stir in the flour and cook over medium heat for about 3 minutes or until the flour has cooked off a bit and a nice sauce is created. Add the milk, salt, and pepper and whisk until well combined. All this mixture to the simmering vegetable broth.

Add in the shredded cheddar cheese and let that slowly melt into the soup. Top with a bit more cheese and enjoy!
