Cheesy Chili Crisp Noodles

INGREDIENTS

  • 1 package instant noodles (or 4oz of your favorite pasta) 
  • 4oz olive oil Mozzarella shreds
  • 2 Tbsp chili crisp (or to taste) 
  • 1 Tbsp soy sauce (or to taste) 
  • Scallions, sliced thinly (optional)

DIRECTIONS

1.

In a small pot, cook instant noodles (or pasta) according to the instructions on the package, omitting the seasoning packets. For an al dente result, remove noodles a minute or two earlier.

When noodles are done, drain cooking water into a measuring cup to reserve. Set noodles aside.

In a saucepan over low heat, ladle ½ cup of the reserved noodle water. Add cheese to the pan. Whisk until smooth, pouring in reserved noodle water as needed to reach desired sauce consistency.

4.

Once sauce is smooth, add noodles, chili crisp, soy sauce, and scallions. Toss until noodles are well coated. Serve immediately with an optional extra drizzle of chili crisp and scallions for garnish.
