- 1 tbsp olive oil
- 1 onion, diced
- 1 garlic clove, crushed
- 500g zucchini, grated
- 2 tsp curry powder
- 350g firm tofu
- 200ml soy milk
- 2 tbsp plain flour
- Salt and Pepper to taste
- Rye bread
- Spinach leaves
- Tomato, sliced

In a fry pan on medium to high heat, add the oil and onion and sauté until transparent. Squeeze grated zucchini to remove excess liquid.
Add garlic and grated zucchini. Season with salt and pepper and sauté until the zucchini has softened. Remove from the heat and set aside.
In a food processor, add the curry powder, tofu, soy milk and flour and blend until smooth. Add to zucchini mixture and add spoonfuls of the mixture to the fry pan over medium-low heat. Fry gently until cooked through.
Allow to cool and refrigerate or freeze until needed.
Assemble sandwich with rye bread, zucchini fritter, spinach leaves, tomato and Good Planet Foods Premium Vegan Cheddar Cheese slices.
